A 210 mm Gyuto (chef knife) hand-forged in Tosa, Kochi — Japan\'s historic carbon-steel cutlery region. The blade is a true 3-layer (san-mai) construction with a Shirogami #1 (White Paper #1) high-carbon core between two layers of softer iron. At HRC 62–63 it takes a screaming-sharp edge and sharpens in minutes on a 1000-grit stone.
Below the kireha (polished bevel) the geometry is hand-thinned for clean release on root vegetables and proteins. Traditional octagonal Wa handle in solid walnut — a dense, oil-rich hardwood that ages beautifully with use. Overall length ~350 mm, weight ~138 g — light for a 210 mm.
