Lancaster County PennsylvaniaOffered for sale:An Antique 19th-century Primitive Folk Art Punched Tin Footed Heart-Shaped Cheese Strainer Mold.A wonderful piece of Americana, it has a hand-punched floral pattern, intact feet and handle.Excellent structural condition with a rich original patina.Design: Features hand-punched floral motifs and linear patterns to allow whey drainage while shaping the cheese.Function: Equipped with a handle and raised feet on the bottom to elevate the mold during the draining process.Material: Aged, oxidized crimped tinplate characteristic of early primitive kitchenware and Americana collectibles.Approximate measurements:5 and 1/2 inches from handle to the bottom tip of the heart

Gravity forced the excess whey or moisture to drain through the hand-punched openings.Setting and Unmolding: After chilling overnight in a cold cellar or icebox, the mixture solidified enough to hold its shape.The cheese was gently turned upside down onto a serving platter and the cheesecloth peeled away, leaving a molded, heart-shaped block decorated with the raised inverse impressions of the tin Dutch cheese served at Easter time is called Egg Cheese, known in the Pennsylvania Deitsch dialect as Oya Käse (or Oya Kase).It was a seasonal \"spring cheese\" eagerly prepared for the Easter Sunday meal to mark the end of Lenten fasting.The traditional ingredients packed into these heart-shaped molds:Whole Milk and Sweet Cream: The rich, liquid base of the cheese.
Beaten Eggs: Acted as both a binding agent and a rich flavor enhancer.

Invert a serving plate over the mold, flip it over, and carefully lift the mold away. Peel off the remaining cheesecloth to reveal the shaped cheese.Traditional Serving: Slice the egg cheese into wedges.
